This recipe is one that is requested most by the Riedell family for Emily to bring to functions! It’s easy, quick, and delicious, a win in my book! Spinach Tomato Basil Orzo Salad with Balsamic Dressing
Serves 4-5
Ingredients:
8-10oz baby spinach
1 cup dried orzo pasta
1 bunch fresh basil
4oz crumbled feta or goat cheese
1 lb cherry or grape tomatoes
1/3 cup balsamic vinegar
1/3 cup olive oil
½ tsp sea salt
½ tsp pepper
2 cloves garlic
2 tsp Dijon mustard
Directions:
Bring water to a boil and cook pasta until al dente, drain and run under cold water to cool.
For the dressing, mix oil, vinegar, salt, pepper, and Dijon together. Mince garlic and add to mixture. Whisk vigorously until emulsified (oil and vinegar stops separating).
Quarter tomatoes, chiffonade basil.
Mix all ingredients, dress salad and serve!
